More about bread

I've had a bread machine for a couple of years. I enjoy it, and often use it on the timer so that I wake up to fresh bread.

Today, however, I did not plan ahead, so I made bread on the rapid bake setting. I actually hadn't realized you could do that with normal yeast -I thought the fast rise yeast was required.

  1. How did your rapid rise bread turn out? Mine is usually not fluffy, because it doesn't rise well.

  2. It's definitely more dense than normal bread - but it only takes 70 minutes, so that doesn't leave much time for it to rise.
